JOANNE'S RED CURRY RECIPE WITH VEGGIES
The town I live in currently has no Thai food restaurant. So, I have had to try my hand at cooking meals to satisfy my Thai food cravings. Luckily, a friend was willing to share her recipe.
While in school, my group of friends used to take turns cooking dinner for everyone. It was a chance for all of us to put down our studying and be "normal" people for a few hours. One friend, Joanne, would make us red curry with chicken when she would host, and it was always delicious. I have modified this recipe to make it solely with veggies- but play around with it to suit your own taste buds!
The Farmer's Market had a beautiful selection of veggies to choose from the other week. Stop by your local farmer's market and support local growers if you have the opportunity! The chance to talk with the people who picked the food in front of you is incredible. They can tell you all about the process of growing, and you will feel much better knowing exactly what you are putting into your body. A common thought I hear is- farmer's markets will be more expensive. Sometimes yes, sometimes no. If that is the case, try picking one or two items on your weekly shopping list and buy them from the market. This week when I stopped by our local market, bell peppers were 50% less than what I pay at our local grocery store.
VEGGIE RED CURRY
Ingredients:
1 Cup Brown Rice
2 Cans Coconut Milk
Red Curry Paste
2 1/2 Cups Carrots
1 1/2 Cups Potatoes
1 Cup Zucchini
1 Red Bell Pepper
2 Jalapenos
3 Cloves Garlic
Fish Sauce
Red Pepper Flakes (I use slightly less than 1 Tablespoon. If you do not like spicy, cut this amount down)
Salt
STEP ONE: Cook 1 Cup of brown rice according to package directions.
STEP THREE: Heat the two cans of coconut milk and 4 Tablespoons of red curry paste in a wok or large pot over medium-high heat.
STEP FOUR: Add the potatoes and carrots into the pot/wok. Bring back to a boil.
STEP FIVE: Add the rest of the vegetables into the pot/wok.
STEP SIX: Cover with a lid (Hopefully you have a lid that fits! But it will work even if you do not!)
Simmer for 15 minutes.
STEP SEVEN: Add a few dashes of fish sauce, Red Pepper Flakes and Salt. Simmer for 3 minutes.
Spoon the curry over rice and ENJOY!
